  • To make live kvass, first boil the potatoes and mash them right in their cooking water—just note that there should be only a small amount of water. Then add the flour and mix thoroughly. Once this mixture has cooled, add the yeast and give it time to rise. After it rises, add the sugar and dry kvass, pour in boiled water, and stir. Drain off the very first batch of kvass; the batches after that are good to drink.
