Delicious Mashed Potatoes (Tolchenka)

Tender mashed potatoes make the perfect side for fish! We've all loved fluffy mashed potatoes since childhood—adults and kids alike know how to make this most popular of sides. Here's my recipe for a tender, tasty mash made a little differently from the classic version. We call it tolchenka.

    Cut the peeled potatoes into small sticks.

    Then drain off half the cooking liquid, leaving the other half in the pot.

    Right away, start mashing the potatoes well until smooth, adding hot potato cooking liquid as needed.
