Chicory is a great coffee substitute, especially for anyone watching their health! Many coffee lovers don't realize how hard it can be on the body — drinking it often can be tougher on you than a heavy meal. It's become such a fixture of daily life that nobody thinks twice about it anymore. But nature gave us a plant whose brew tastes a lot like that popular drink while outdoing it in many ways — chicory! And a chicory drink is very easy to make.

    Grind up the dried chicory root.

    Pour boiling water over it in a saucepan and keep it over low heat for 15 minutes.

    You can also use ready-ground chicory, but the aroma of a freshly ground root is far more pronounced and inviting. Then take the brew off the stove and let it sit for another 5 minutes.

    Strain the drink through a fine sieve or a layer of cheesecloth — and it's done!
