  • This little berry grows in bogs and the tundra — places where almost nothing else will, and where it's often the only source of vitamins. And without vitamins, no amount of food does you much good. People have spread across nearly the whole planet and learned to make the most of the local flora everywhere, however sparse it may be — which is exactly why there's a recipe for cloudberry jam. Where there's a berry, there's a way to put it up. For the jam, choose the ripest, biggest berries. Sprinkle them with lemon juice and let them sit for about half an hour. Use sugar in the ratio of 300 g per 400 ml of syrup, and dissolve it in the dry white wine. Stir until the sugar dissolves, add the prepared cloudberries, and cook down until done. Lift the cloudberries into sterilized jars with a slotted spoon, and stir the remaining sugar into the syrup. Cook the syrup until it bubbles, then pour it over the berries in the jars. Seal the lids (a jar sealer works, but screw-top jars are fine too). Turn the jars upside down and wrap them in a blanket so they cool slowly and the berries keep steeping.
