  • Snetki are just dried smelt. You can eat them on their own — you don't even have to clean them; they vanish in no time and leave you wanting more. But if you get the chance to make soup from them, you won't be sorry. The recipe is flexible depending on what you have on hand: you can add buckwheat, make it into a cabbage soup, or keep it as a simple soup. If you're keeping a fast, fish is allowed during the Nativity Fast — so make yourself this soup, just skip the milk and sauté some carrot instead. Soak the dried smelt in water for 2 hours. If you like, you can clean them by pulling off the heads, but I wouldn't bother — for some reason the soup seems tastier that way. Sauté the onion, add the smelt, and keep cooking. Peel the potatoes and cut them into cubes. Boil them in salted water until half done, then add the onion and fish and cook until everything is tender. If you're not fasting, stir the flour into the milk, warm it, add it to the soup, and let it come to a boil. If you are fasting, sauté the carrot and add it to the soup instead. Serve with fresh herbs.
