No-Cook Chokeberry (Aronia) for Winter

A real vitamin bomb! And very tasty, too! No-cook chokeberry for winter is both a way to ward off colds and boost immunity, and a sweet treat for tea, all at once. It's very easy to make, and since the recipe involves no heat treatment, the berries retain the maximum of their nutrients. Just what you need in the cold months!

  • Everyone knows how good for you this black, slightly astringent berry is. It grows in many gardens and ripens toward the cold season. Sometimes gardeners are at a loss for what to do with these berries and what to make from them. Yet there are plenty of options — jam, compote, and homemade wine. You can also freeze the aronia (another name for chokeberry). Or you can simply pack the berries in sugar — they keep well for a long time, especially in a cool place. It's this last method that this recipe uses. Start by preparing the berries. Sort the chokeberries carefully, wash them, and then pull the berries off the stems. Spread them out on a large clean towel so the berries dry. There should be no excess moisture on them.
  • Next, put the chokeberries in a blender, add the specified amount of sugar, and purée everything together. It doesn't have to be perfectly smooth — small pieces of berry are fine. If all the berries don't fit in the bowl at once, blend the chokeberries in batches.
  • Transfer the berry purée to a large pot and stir. All the sugar crystals need to dissolve. Leave the mixture to stand for 2-3 hours, stirring the "raw jam" from time to time. It's best to cover the pot fairly tightly with a lid. If crystals still remain after three hours, stir everything and give it more time.
  • Sterilize small jars and suitable lids. Do this however is convenient — in the microwave, oven, or over steam. The lids can simply be boiled for a few minutes.
  • Spoon the chokeberry treat into the prepared jars and seal them tightly. Store this "raw jam" in a cool place (a cold cellar or the refrigerator).
