Plombir (Ice Cream) Cream with Mascarpone

    1. Pour the chilled cream (at least 33% fat) into a bowl and beat it with a mixer. Start beating at low speed, then gradually increase to the mixer's maximum power. Keep whipping the cream until it thickens enough to become a firm white mass. When you tilt the bowl, it shouldn't run but should stand in a thick peak. This usually takes 5 to 10 minutes, depending on the power of your mixer and its top speed. If you don't have a mixer, you can whip the heavy cream by hand with an ordinary whisk. In that case, whipping the cream takes much more time and effort, but it's entirely doable. 2. Put the mascarpone in a separate container and add the powdered sugar. To give the cream a pleasant aroma, you can add vanillin (you can replace it with vanilla sugar, vanilla syrup, or extract). Then mix thoroughly with a mixer on low speed until smooth. Or mash it with a fork or spoon until the powdered sugar completely dissolves into the cheese and is evenly distributed. 3. Once the two main components of the cream are ready, you can move on to the final step — combining them. Fold the whipped cream into the mascarpone-and-powdered-sugar mixture. Do this very carefully, since whipped cream is a very unstable substance. To make the cream soft and airy, add the cream a little at a time, in small portions, gently folding with a silicone spatula. Use bottom-to-top motions so the cream doesn't deflate and ruin the texture. Once the cream is combined, it's ready to use. You can use it for all kinds of cakes, pastries, cupcakes, croissants, tiramisu, and other equally delicious desserts. Enjoy!
