Pasta with Cheese and Vegetables for Dinner
Time to treat yourself to the rich flavor of real pasta! A delicious dish, and quite easy to put together. You can make so many different dishes from pasta — bake it, stuff it, dress it with all kinds of sauces — and it always turns out great. We're used to pasta as a hot dish, but here's a cold version worth trying: spaghetti with tomatoes and cheese. It's tasty and practical — perfect to take along on a picnic!

- Put the pasta on to cook in boiling salted water, following the package directions. Meanwhile, finely chop the garlic and onion, and dice two of the three tomatoes. Sauté the garlic and onion in olive oil, add the diced tomatoes, and cook until soft, then season with salt and pepper. In a blender, purée the third tomato with a few sprigs of parsley and a little salt. I warm this purée a bit so it doesn't cool the pasta down — the microwave works fine for that. Now toss the cooked pasta with the sauté and the sauce, and top with finely grated cheese. If it's not hot enough, give it a quick zap in the microwave, though it's already excellent at this point. You can also swap the olive oil for any other oil — even butter.
