  • Heat the olive oil in a skillet and add the finely chopped onion, the coarsely grated carrots, the crushed garlic, and the chopped celery. Sauté, stirring, for about ten minutes. Add the ground meat and mix well; turn up the heat a little if needed so the meat cooks faster. Now pour in the canned tomatoes (juice and all) and stir in the tomato paste. Season with thyme and cook for another seven minutes or so, letting the tomato juice reduce. Then pour in the broth and wine, cover, lower the heat, and simmer gently for about 10–12 minutes. Meanwhile, boil the pasta. When both are ready, toss them together, and finish with grated cheese on top if you like.
