  • When I treat my friends to zucchini-and-orange jam, no one can believe it's made from those ingredients. Most people think it's pineapple-and-orange jam. And once they find out what's actually in it, they always ask for the recipe. There really isn't any zucchini flavor in the jam at all — just the aroma and taste of orange. To make it, peel the zucchini, scoop out the seeds, and cut it into cubes. Cover the prepared zucchini with sugar and leave it for 4 hours. Then bring the mixture to a boil and let it sit for another 4 hours. Wash the oranges and run them through a meat grinder, peel and all. Add the ground oranges to the jam, bring it back to a boil, and let it rest for 4 hours. The last step is to add the citric acid and bring the jam to a boil once more. Spoon the jam into sterilized jars, then close them with nylon lids or seal them. It comes out wonderfully tasty!
