I picked up the recipe from some distant relatives, who shared all the little tricks and key steps for making it, and that's exactly what you'll find here. Let's get started. First, separate the firm white layer of the rind from both the green outer skin and the bright red flesh. Cut that white part into roughly ½-inch (1.5 cm) squares, drop them into hot water for 6–10 minutes, then simmer them in a thin syrup until the pieces turn fully translucent. Let them stand for 7–10 hours. Then cook the rind together with the apples in several rounds (3 or 4), with 3–4 hours of rest between each. Near the end, add a pinch of citric acid and a little vanilla. And there you have it — a delicious treat to enjoy with the whole family. You can make this same jam with plums, pears, or quince.
