  • A good friend of mine recently came back from Thailand with a suitcase full of gifts, photos, and stories. But the best thing he brought back was a Thai recipe — this rice soup with eggs. I've made it a couple of times already, and I'm happy to share how it's done. Start by heating the oil in a large skillet, then add the pork and garlic and cook for 1-2 minutes. Add the green onion, broth, chili, and ginger, and stir until it comes to a boil. Stir in the cooked rice, lower the heat, and simmer the soup for another 2-3 minutes. Add the fish sauce and season with salt and pepper to taste. Then gently crack the eggs into the soup and cook over very low heat for about 3-4 minutes. The rice soup is ready. Ladle the Thai soup into bowls and garnish with cilantro or other fresh herbs.
