- An old classmate of mine is coming to visit! His birthday is in two weeks, and he said he wants to host the celebration at my place — I plan the menu, he covers the groceries. I know nothing will surprise him easily, since he cooks a lot himself. So I dug through my little notebook, where I keep a whole stash of recipes, and there it was: a delicious birthday salad — just the thing. A chicken salad is mostly a party dish, after all. And with melon? Even better! Chicken pairs beautifully with almost anything you mix in — garlic, nuts, mushrooms, cheese, you name it. And yes, even melon. Traditionally, for a chicken salad you'd boil the meat, cool it, and then toss it with the other ingredients, finishing with sour cream, mayonnaise, or another dressing of your choice. So, while we wait, let's go over how this salad comes together — I can't afford to embarrass myself, especially since my classmate is apparently planning to ask me something important. Peel the melon, cut it in half, and scoop out the seeds. Slice a ring from each half, and dice the rest. A tip: you'll get the best flavor if you use chicken that's been baked in foil rather than boiled — and ideally chilled chicken, not frozen. Now combine the chopped ingredients — chicken and melon, radishes and celery — and add the egg along with the mayonnaise. Chill the finished salad. And remember: if you're not using white meat, it's better to grill the chicken. How to serve it? However you like. You can mound it in the center of a melon ring set on a plate, or simply slice the chicken and cut the melon into pieces and drizzle everything with dressing — it's up to you. Enjoy!
