Layered Beet, Potato, and Herring Salad

First, clean the herring. Gut it by slitting the belly, cut off the head and backbone, remove the bones, and peel off the skin — you'll only need the flesh. If the herring is too salty, soak it beforehand in water or milk. Cut the fish fillet into small pieces. If you'd rather not spend time breaking down a whole herring, just buy ready-made fillets at the store.

Boil the potatoes in their skins: put them in a pot of cold salted water and cook for 25 minutes after it comes to a boil, until tender — you can check with a sharp-bladed knife. Remove from the water and let cool.

Boil the beet for 40-50 minutes until soft, then cool it by taking it out of the pot and leaving it in a cool spot for a while. You can check the beet for doneness the same way, piercing it in a few places with a knife.
