  • I found the recipe for this soup in a food magazine. Cuban cooking once again wins you over with how simple it is to make and how satisfying it is. Here are all the steps in order for making caña — Cuban-style soup. Rinse the rice well, then drop it into boiling salted water (1 cup) and cook until tender and fluffy. Cut the prepped whole chicken into serving pieces, cover with cold water, and bring to a boil; skim off the foam, salt it, and simmer for 20 minutes. Meanwhile, chop the peeled onion and carrot and sauté them in vegetable oil until golden. Wash the tomatoes, scald them with boiling water, peel off the skins, and cut the flesh into small pieces. Seed the bell pepper, rinse it well, and cut it into large chunks. Rinse the green onion and chop it coarsely. Once all that's done, drain off some of the broth so the remaining liquid just covers the chicken, then add the tomatoes, green onion, onion, and bell pepper.
