In Spain, this food is called "tortillos", and we have "pancakes". I offer a culinary recipe for pancakes with shrimp.
Put a saucepan with shrimps filled with water on the fire and bring to a boil. As soon as the water boils, remove the shrimp with a slotted spoon. Let them cool down. And we save 1 tbsp. of the water in which they were cooked. In the meantime, we make the dough - mix flour, parsley and green onions. Mix everything, add a glass of "shrimp water" and salt. The texture of the dough should have the consistency of thick sour cream. We close the lid and send it to the refrigerator for an hour, along with the boiled shrimp.
Finely chop the shrimp to the size of ground coffee, mix with the dough and mix well.
Pour olive oil into a deep saucepan for 2.5 cm. And we warm it up almost until the smoke appears. Dip a tablespoon into the oil and type the dough. Pour it into the oil and level it a little.. Fry for about one minute on each side. Pancakes should become an even golden color with "lace" edges. Pull out with a slotted spoon, letting the oil drain a little. And then we put it on a dish in which paper towels were laid. Pancakes are served hot.
