  • A friend of mine gave me this recipe after a trip to China, where she tried this Chinese dish made by professional chefs. Without a second thought, she talked her host into sharing the recipe for this heavenly dish. When she got home, we decided to make it together. First we boiled the noodles and rinsed them under cold running water. We finely chopped the garlic and ginger, set aside the larger portion, and ground the smaller portion in a mortar with a little sea salt. We cut the chicken into small pieces, added the ground garlic-ginger paste, and poured in cooking wine and the sweet soy sauce. Then we laid the marinated chicken into a skillet with hot oil and stir-fried it, transferring the cooked meat to a bowl when done. In the same pan we stir-fried the reserved ginger and garlic, added the coarsely chopped mushrooms, poured in soy sauce to taste, returned the half-cooked chicken, and stirred in 1 tablespoon of black vinegar. Then we added the sliced leek, thinly sliced cucumber, the noodles, and the pickled onion and carrot. At the very end we tossed in a few mint leaves. We divided the noodles among bowls and served them hot. Your Hokkien noodles are ready — enjoy!
