Recently discovered a new kind of mashed potatoes – champ. In the Irish national cuisine, mashed potatoes may contain uncompressed lumps of potatoes and coarsely chopped onions. The result is an ordinary and at the same time a little unusual food. This dish can also be served with meat.
Here is the recipe for this wonderful dish:
First of all, peel and cook the potatoes in salted water, as you usually do. Drain the water after cooking. Mash the boiled potatoes with a pusher.
Now heat the milk in a cast-iron saucepan and add a piece of butter. Wait until the butter has melted. You can move on to the onion. Coarsely chop the green onions. Throw the lower white pieces of onion into a saucepan with milk and heat them for a minute on the fire. After that, pour the remaining green onion pieces into the saucepan. Then remove the saucepan from the heat, mix everything thoroughly. Now combine the onion and milk with the potatoes and mix well. Add salt to taste.
And you can put the ready-made and delicious potatoes with onions back in a cast-iron saucepan, add the butter and let it stand for a few minutes in the oven.
That's it, champ is ready!
