  • Start by pouring some water into a shallow dish and dissolving the gelatin in it; do the same with the starch in a separate dish. Pour water into a small saucepan and set it over the heat. As soon as it comes to a boil, pour in the milk and cream and add the sugar and vanilla sugar. Stir thoroughly until the sugar has completely dissolved. Add the bloomed gelatin to the pan, stirring constantly. Once the gelatin has fully dissolved into the milk-and-water mixture, stir in the starch. Bring it back to a boil, then take it off the heat. Let it cool slightly, stir in the rose water, and mix well. Pour the finished mixture into a mold and chill in the refrigerator for 5 to 6 hours — longer is fine too. For the syrup: bring water to a boil, add rose water and sugar, stir until everything is well combined, then take it off the heat and let it cool. Serve the malabi on a dish, drizzled with the syrup.
