  • This Polish-style kholodnik is very easy to make — really, it's just a version of okroshka. The soup is at its best in the heat of summer, when you're craving something cool. Best of all, there's no cooking required and it comes together fast. It's great for vegetarians too, since you don't need any meat. Here's how it goes: finely shred the sauerkraut, add chopped fresh herbs (dill and parsley work well) and chopped scallions, and stir in some pickled mushrooms. Use whatever mushrooms you like — crisp, fragrant milk caps or little honey mushrooms are lovely and pretty in the bowl. Now dice the pickles and add them. Hard-boil the eggs, chop them fine, and fold them into this salad-like mixture. Chill it in the refrigerator for half an hour. Then pour in strong bread kvass and finish with sour cream and a little sugar. Dinner is served!
