- A Polish meal is never complete without soup. Here's a recipe for traditional Polish borscht. First, you'll need to make beet kvass — and it's very easy. Take about a pound (half a kilo) of fresh beets, peel them, and chop them. Put them in a glass dish, pour in 1 liter (about 4 cups) of water, and add a piece of bread — stale is fine. Cover the dish with a cloth (cheesecloth works well) and set it in a warm spot so fermentation can start. After a few days, strain the kvass. Now make the broth: simmer the meat, bones, and dried mushrooms in 1 liter of water. When the broth is nearly done, add an onion that you've first sautéed until golden, along with the chopped carrots and the seasonings. Cook the beets separately, then peel and grate them. Stir the grated beets into the broth and bring it to a boil. Mash the garlic clove with a little salt and add it for fragrance. Then pour in the kvass and let it boil. Strain the borscht before serving so only the clear broth remains, and garnish with fresh herbs if you like. In Poland, instead of bread it's traditional to serve this soup with a savory pie or filled dumplings (uszka). Beyond the beef, you can add various smoked meats to give the soup more depth. Enjoy!
