Salmon in Dill-Cucumber Sauce
The sauce plays up the delicate flavor of the salmon — a dish that's both nourishing and good for you! Salmon is one of those fish many of us aren't used to pan-frying the way we would, say, pollock. We tend to reach for it for sandwiches and platters, less often as a hot main. It's a rich, fatty fish, which makes it deeply satisfying, and it's packed with nutrients and vitamins. To shake up your fish repertoire, here's a recipe in which salmon is pan-fried and served in a cucumber-dill sauce.

Add the oil and cream to a preheated skillet.

- Take a fillet of Norwegian salmon and cut it into serving-size pieces. The exact size is up to you, but don't cut them too small. Season the pieces with salt and pepper and squeeze plenty of lemon juice over them so the fish stays juicy as it cooks. Pour vegetable oil into a preheated skillet and stir in the cream — that's the base of the sauce. Add finely chopped dill and cucumber and cook until thickened. Fry the salmon in a separate skillet; a cast-iron pan is best, since it heats evenly and gives the fish a good sear. As soon as the salmon is done, spoon the sauce over it. And that's it — a wonderful, nourishing, delicious meal is ready. Serve the salmon with its sauce, garnished with dill sprigs and lemon slices. Enjoy!
