- This dish is most often made right after a sheep is butchered — when you're slaughtering an animal at home, you put every bit of the meat and offal to use. Of course, you can also just buy what you need at the market. Hasip only looks complicated; in reality it's as simple as nearly everything in Uzbek cooking. Take the meat and chop it very finely, almost to a paste — or run it through a meat grinder. Chop the raw fat, the lung, and the onion the same way. Once everything is well combined, mix in the raw rice and season generously with salt and pepper. Don't be shy with the seasoning — hasip often turns out bland after boiling. Tie off one end of a length of lamb casing with kitchen twine, stuff it with the filling, and tie off the other end. Cover with cold water and simmer for half an hour. Serve hasip hot as a main course, or take it along cold for a road trip or a picnic.
