  • Polenta taragna is the simplest of Italian dishes. Give this wonderful dish a try and you'll come to love it as much as millions of Italians do. This recipe will teach you to make the very best breakfast. As for the cheeses, the best choices for this dish are Edam and Gorgonzola—though if you don't have them on hand, other varieties will do just fine. Take a large pot and fill it with cold water. Pour in the milk and add a little salt. Bring the mixture to a boil and add the stale bread. Then slowly and carefully pour the cornmeal into the boiling liquid, stirring constantly, and cook for 10–15 minutes. The key is to keep lumps from forming. Add the cheese a little at a time, stirring until it melts in. In a skillet, heat the butter and add the garlic, finely chopped or pressed. Once the polenta is cooked, spoon it onto a plate and pour the garlic butter over the top. Garnish with parsley. The polenta taragna is ready—time for breakfast.
