- Polenta taragna is the simplest of Italian dishes. Give this wonderful dish a try and you'll come to love it as much as millions of Italians do. This recipe will teach you to make the very best breakfast. As for the cheeses, the best choices for this dish are Edam and Gorgonzola—though if you don't have them on hand, other varieties will do just fine. Take a large pot and fill it with cold water. Pour in the milk and add a little salt. Bring the mixture to a boil and add the stale bread. Then slowly and carefully pour the cornmeal into the boiling liquid, stirring constantly, and cook for 10–15 minutes. The key is to keep lumps from forming.
