Cooking method
First we'll cook the croutons. To do this, take 3 egg yolks, put them in a bowl and beat them together with parmesan, paprika and tabasco. Sprinkle grated parmesan on top. Grease the slices of bread with this mixture and place them in the oven on a baking sheet. Fry at a temperature of 170 degrees, cool and cut into small pieces.
Next, roll out the dough on the table and cut it into paste. This can be done with the help of a special device, if of course you have it. This paste is called tagliolini.
Cut the scallops into thin slices and put them on plates. We will put anchovies there along with slices of tomatoes. Chop the Parmesan cheese and put it in plates too.
Fill the pot with vegetable broth and add cloves and pink pepper to it. Bring the broth to a boil and add the tagliolini to it. When the pasta is cooked, pour the soup into plates directly in boiling form. Add croutons and scallop soup to the plates and tagliolini Neapolitan with croutons is ready.
