- First, let's make the croutons. Put 3 egg yolks in a bowl and beat them together with Parmesan, paprika, and Tabasco. Sprinkle a little grated Parmesan over the top. Spread this mixture onto slices of bread and place them on a baking sheet in the oven. Toast them at 340°F (170°C), let them cool, and cut them into small pieces. Next, roll out the dough on the counter and cut it into pasta—you can use a pasta machine for this, if you have one. This pasta is called tagliolini. Slice the scallops thin and arrange them on plates. Add the anchovies along with the tomato slices. Grate the Parmesan and add it to the plates as well. Fill a pot with the vegetable broth and add the cloves and pink pepper. Bring the broth to a boil and add the tagliolini. Once the pasta is cooked, ladle the soup—still piping hot—over the ingredients in each plate. Add the croutons, and your Neapolitan-style scallop and tagliolini soup with croutons is ready.
