  • I boil the chicken breast and then cut it into cubes. I crumble the hard cheese into similar cubes and cut the bell pepper into small squares. I press the garlic through a garlic press. Meanwhile, I make croutons in the oven—though store-bought ones work too. I combine all the ingredients except the croutons, dress them with mayonnaise, and then chill the Beijing salad with boiled chicken in the refrigerator for a couple of hours. I sprinkle the chilled salad with croutons and bring it to the table. I saw this recipe on a TV show right before the Chinese New Year. It stuck with me so well that I didn't even write it down—I just memorized the ingredients on the spot. But I only made it for the first time recently and was thrilled with its refined flavor, so typical of Chinese cooking.
