- I boil the chicken breast and then cut it into cubes. I crumble the hard cheese into similar cubes and cut the bell pepper into small squares. I press the garlic through a garlic press. Meanwhile, I make croutons in the oven—though store-bought ones work too. I combine all the ingredients except the croutons, dress them with mayonnaise, and then chill the Beijing salad with boiled chicken in the refrigerator for a couple of hours. I sprinkle the chilled salad with croutons and bring it to the table. I saw this recipe on a TV show right before the Chinese New Year. It stuck with me so well that I didn't even write it down—I just memorized the ingredients on the spot. But I only made it for the first time recently and was thrilled with its refined flavor, so typical of Chinese cooking. Every friend who tried this Beijing salad immediately asked me to share the recipe, which I was more than happy to do.
