Muscovy Duck Soup with Ketchup and Canned Beans
A tasty, hearty, no-fuss soup. A really delicious soup with Muscovy duck, ketchup, and canned beans! (Muscovy duck is a lean, mild duck; regular duck works too.)

Step 1:
Gather your ingredients. Simmer the Muscovy duck with a bay leaf until tender, then lift the meat out of the broth.

Step 2:
Peel the potatoes and cut them into cubes. Add them to the broth. Press a couple of garlic cloves through a garlic press.

Step 3:
Pull the duck meat off the bones. After the potatoes have cooked for 15 to 20 minutes, add the duck and the beans. Cook for another 5 minutes.

Step 4:
Finely chop the onion and sauté it, grate the carrot, and add it to the onion.

Step 5:
Add the ketchup to the sautéed vegetables.

Step 6:
Season with salt and pepper. Add the mixture to the potatoes.

Serve, topped with fresh herbs. Enjoy!
