Chinese Noodles with Beef and Asparagus in Teriyaki Sauce
A tasty, quick, popular Chinese dish! Don't pass it up.

Step 1:
Take the beef and pat it dry with a paper towel. Cut it into thin strips, 2–3 cm (about 1 inch) long. Heat a skillet, add oil, and once it's hot, add the beef. Fry for 3–4 minutes over high heat, stirring every minute. If a lot of liquid releases, simmer over low heat until it evaporates; if not, add 2–3 tablespoons of water and let it braise.

Step 2:
Add the asparagus, thawed and cut into thirds. Fry for another two minutes (it's important the asparagus keeps its bright color).

Step 3:
Make the sauce: 4 tablespoons teriyaki + 4 tablespoons soy sauce (adjust to taste, since teriyaki varies in saltiness), plus one clove of garlic put through a press. Mix well and add to the skillet. Stir to coat the beef in the sauce. Cook the noodles to al dente and toss them with a scant tablespoon of butter.
