Stevia Hard Candy with Cream of Tartar

You can make hard candy without any sugar! These sugar-free lollipops aren't hard to make, and we'll use agave syrup. It has fewer calories than sugar and a low glycemic index, so it doesn't spike your blood sugar. That said, agave syrup is about 85% fructose, which shouldn't be eaten regularly — so even sugar-free candy should be an occasional treat if you're watching your health.

  • You can use special candy molds, or mini muffin molds. You can even make the candies in regular tablespoons — set a stick in the bowl of each spoon and pour the caramel over it. So, prepare the molds and grease them with vegetable oil. A neutral, odorless oil is best, so it doesn't add off-flavors to the candy, and an oil spray is even better, since it gives the thinnest coating. In a small saucepan, combine the agave syrup and water. Set it over medium heat and bring to a boil. Add the cream of tartar and stir well. Now it's best to use a candy thermometer. Cook the mixture to 290°F (143°C). You don't have to stir constantly — just occasionally. At 290°F the mixture starts to darken and bubble. Take the saucepan off the heat, add the vanilla extract and liquid stevia, mix, and immediately pour the mixture into the molds. Insert the wooden sticks (prepared ahead of time) into the still-liquid candy. Let the candies cool, then refrigerate for 1 hour to harden completely. After that, they're ready to taste! These candies keep quite a while in an airtight container; for storage, wrap them in parchment or plastic wrap. Enjoy!
