Signature Siberian Pelmeni with Mushrooms
The secret dough recipe for SUPER juicy pelmeni! A wonderful recipe for Siberian pelmeni made with a hot-water dough that won't fall apart as it cooks, staying sealed around its own incredibly tasty juices. (Pelmeni are small Russian meat dumplings.)
Cooking method

Step 1:
Start the hot-water dough by pouring 250 ml of boiling water into a suitable bowl.

Add 3 tablespoons of vegetable oil and a teaspoon of salt to the bowl and mix well.

Add 500 grams of sifted flour to the bowl a little at a time, stirring constantly to work the dough.

Add one egg to the bowl.

Adding more flour, whisk all the ingredients together well.

Keep kneading the dough in the bowl by hand.

Dust the counter with a little sifted flour, turn out the dough, and knead it vigorously for ten minutes, then put it in a plastic bag to rest for half an hour.

For the filling, grind 600 grams of the mixed meats into a bowl, alternating with 200 grams of onion, then press in two cloves of garlic and add salt to taste.

Add a blend of black and red pepper to the filling to taste.

Pour 50 ml of water into the filling.

Mix the filling thoroughly until smooth.

Dust the counter with a little flour, turn out the dough, and roll it into a thin sheet about 2 mm thick.

Cut out rounds using the rim of a small glass.

Place a spoonful of filling on each round and pinch them into pelmeni — I got 120 of them.

Bring a pot of water to a boil, add 200 grams of cooked honey mushrooms along with salt, onion, black pepper, and bay leaf to taste, then drop in as many pelmeni as you need. Once the water returns to a boil and the pelmeni float, cook them for ten minutes.
