Crab Stick "Mice" Party Appetizer

Crab-stick appetizers shaped like little mice for the holiday table! Lately it's become popular to shape salads and appetizers like the coming year's animal symbol — but you don't always want to experiment with unfamiliar ingredients. So try this easy salad made with crab sticks, molded into cute little mice.

  1. Step 1:

    Gather all the ingredients from the list. Set one whole crab stick aside for later. Freeze the rest just slightly, then grate them on a fine grater; if they won't grate cleanly, chop them very finely instead. Mine didn't grate well, so I grated some and finely chopped the rest. Set aside 1/3 of the grated crab sticks and put the remainder in a deep bowl.

    Add the cream cheese to the chopped crab sticks. You can swap the cream cheese for processed cheese, but you'll need to grate it on a fine grater too — freeze it briefly first so it grates more easily.

    Peel the boiled, cooled eggs and grate them on a fine grater as well. Add the grated eggs to the bowl with the other ingredients.

    Peel the garlic cloves and press them into the salad. Grate the hard cheese on a fine grater, add it to the bowl, and mix. Taste and add salt if needed. Chill the mixture in the fridge for half an hour — once it's cold, it's much easier to shape into mice.

    Cut thin strips from the reserved crab stick — these are the mouse tails. Wash the fresh radishes, slice them into thin rounds, then cut each round in half for the ears. Whole black peppercorns make the noses and eyes (just warn everyone not to eat them along with the mice!). Divide the mixture into 7–9 portions, roll each into a ball, then shape it into a teardrop. Roll each one in the reserved grated crab stick.

    Give each mouse radish ears, black-peppercorn eyes, and a crab-stick tail. Arrange the finished mice on a pretty platter, add the pieces of cheese, and serve.
