  • Dice the boiled potatoes. Peel the orange in one long spiral and don't toss the peel — set it aside for garnish. Remove the membranes from the segments and cut the oranges into cubes. Peel the apples and cut them into slices. Slice the onion into rings. Sauté the onion in vegetable oil with the ham for about five minutes, then add the apples and cook another 5 minutes. In a salad bowl, combine the squeezed sauerkraut, potatoes, and oranges, and mix gently. Add the sautéed ham-and-apple mixture and toss. For the dressing, whisk the lemon juice with the sesame oil, then dress the salad. Garnish the "Evening" salad with the orange-peel spiral and sprigs of parsley.
