Layered "Sushi" Salad with Salmon, Cucumber and Rice

  • Stir some wasabi into mayonnaise — this is the dressing you'll spread between the layers. Cook the rice as you would for sushi: rinse it, add water (1 1/2 parts water to 1 part rice), and bring it to a boil so the water cooks off (about 7 minutes). Reduce the heat to low and cook for another 15 minutes, then take it off the stove and let it rest, covered, for about half an hour. Boil the carrot and the eggs as well. While those cook, prep the rest: cut the salmon into small pieces, dice the cucumbers, and finely slice the onion. You can chop the herbs ahead of time too. Grate the boiled carrot and the eggs. Mix the grated eggs with the green onion and bind them with the wasabi-mayonnaise dressing. Now build the salad in layers, spreading wasabi mayonnaise between each one: Layer 1 — rice, spread with dressing. Layer 2 — salmon. Layer 3 — dill. Layer 4 — red onion. Layer 5 — cucumber, topped with wasabi mayonnaise. Layer 6 — the egg-and-onion mixture. Layer 7 — grated carrot, spread with dressing as well. Chill the salad in the refrigerator for about two hours, then serve. Enjoy!
