Pasta Salad with Smoked Pink Salmon and Parmesan

Sometimes a hearty salad can be a full dinner on its own! Smoked pink salmon and cheese are a classic pairing. It looks complicated at first glance, but it really isn't. Any pasta shape works, as long as it's made from durum wheat, and it should be cooked al dente — that is, left just slightly firm to the bite. Don't swap the Parmesan for another cheese; it plays a real part here, giving the dish its special charm.

  • This salad is filling enough to serve as dinner. Round it out with some grilled vegetables if you like. 1. Peel the onion and chop it as finely as you can, then sauté it in olive oil just until translucent. Don't let it brown — you want soft, translucent onion here, not golden. 2. Cut the smoked salmon fillet into thin slices, add it to the pan with the onion, and keep cooking until the salmon turns opaque, 1 to 2 minutes, no more. 3. Pour the cream over the fish and add the capers (drain them from their brine first and pat them dry with paper towels). 4. Taste and season with salt and ground black pepper — go easy on the salt, since the smoked salmon and capers are already salty. 5. Cook the pasta while the sauce comes together. Bring a pot of water to a boil, salt it lightly, and cook the pasta al dente per the package. Drain it, rinse quickly under cold water, and let it drain fully. 6. Grate the Parmesan on the fine side of a box grater. Put the pasta in a bowl, sprinkle with Parmesan, and toss. Spoon the salmon-and-caper cream sauce over the top. Garnish with fresh herbs if you like — rosemary works beautifully and rounds out the flavors. Enjoy!
