Grilled Sausage Salad with Peaches and Beets
Make a bold, zesty salad — delicious and out of the ordinary! This sausage salad is a treat for adventurous eaters. The ingredients are simple enough, but the combination is anything but standard. Don't be afraid to experiment — you'd be missing out otherwise! You'll want very young beets, which cook quickly. The peaches and sausages are grilled; in a city apartment, a grill pan does the job. Choose good-quality sausages — the kind you'd serve with beer work great.

- You can grill the sausages and peaches however's convenient: on a grill pan or outdoors over hot coals. This salad is a great pick for a picnic, too, if you bring pre-cooked beets along. 1. Wash the small young beets, trim off the tops, and put them in a pot. Cover with clean cold water and set over the heat. Boil until tender, then drain and let the beets cool to room temperature. Peel them and cut each one in half. 2. Lay the sausages on the grill and cook for 15 to 20 minutes until fully done, turning them so they brown well on all sides. Transfer them to a bowl and cover to keep warm. 3. Wash the peaches, remove the pits, and cut the fruit into quarters. Set them on the grill pan (or grill grate over coals) and cook quickly, about 2 minutes, turning them as they go. 4. Peel the red onion and cut it into quarter-rings. Wash the radishes, trim the ends, and slice them into thin rounds. Crumble the goat cheese into large pieces with your hands. Rinse and dry the spinach. Cut the grilled sausages into large chunks. 5. Combine everything in a large bowl: sausages, peaches, radishes, beets, spinach, red onion, and goat cheese. Drizzle with the balsamic vinegar and season with salt to taste. Wash the parsley, pull the leaves off the stems, and add them to the salad. Now it's ready to serve. Enjoy!
