Green Pea Purée Soup (Vegan)

A bright, colorful meat-free soup — mix up your menu! This soup is great for a plant-based or fasting-day meal: it's nourishing and easy to make. Use frozen or fresh peas, whatever you have, and the same goes for the dill. Adjust the lemon juice to taste — some like it tangier, others prefer it mellow. If you're not keeping it vegan, stir in a little cream or sour cream!

    Gather these simple ingredients. I used frozen peas and dill; in summer you can use everything fresh.

    Rinse the peas, cover with the water, and set over the heat. Once it boils, cook for 10 to 12 minutes.

    Peel the onion and roughly dice it — since you'll fry it and then blend it, the size doesn't matter. Add the vegetable oil to a skillet and fry the onion for 5 to 6 minutes.

    The finished onion is fragrant and golden.

    Add the fried onion to the cooked peas and let it sit for 5 minutes so the vegetables cool down a bit from the boiling liquid.

    Then add salt to taste, the lemon juice, and the dill to the pot. Blend everything smooth. I use an immersion blender; if you don't have one, a countertop blender (the kind you'd make smoothies in) works too.

    Blend the soup to a purée — the aroma is amazing! Set the pot back over the heat and bring it to a boil. Add pepper to taste. You might want a bit more lemon juice, too — give it a taste!
