Chicken Heart Salad with Mushrooms, Pickles, and Cheese
Made from simple ingredients, this salad comes out filling and delicious. It works for a weeknight dinner or a holiday meal — and chicken hearts are packed with vitamins and minerals! Instead of pickles you can use fresh cucumbers and chopped herbs; that's tasty too. For the dressing, swap the mayonnaise for sour cream, or mix the two.

- Trim the large vessels off the chicken hearts and clean out any blood clots. Simmer them in salted water for 20 to 25 minutes. Cool them, then cut each heart lengthwise into 4 pieces. Slice the mushrooms into strips. Finely chop the onion. Sauté the onion in a little vegetable oil until translucent. Add the mushrooms and cook until the liquid has evaporated. Turn off the heat and let the mushrooms cool (ideally, spread the sautéed mushrooms and onion on a paper towel to blot off excess oil — I only realized that just now). Cut the pickles into strips. Grate the cheese on the coarse side of a box grater. Put the chicken hearts and the cooled mushrooms and onion in a roomy bowl. Add the sliced pickles and the grated cheese.
