Smoked Mackerel Salad

    1. Boil the potatoes in their skins until tender, then cool them, peel, and cut into wedges.
    1. Peel the onion and slice it into thin half-moons. Cut the olives in half.
    1. Hard-boil the quail eggs, cool and peel them, and cut them in half.
    1. Wash the cherry tomatoes and halve them too. Wash the lettuce and tear it into large pieces.
    1. Cut the smoked mackerel fillet into small pieces.
    1. In a separate container, whisk the olive oil with the white wine vinegar.
    1. Put the potatoes, olives, mackerel, and onion in a bowl, add the torn lettuce, season with salt, drizzle with the dressing, and toss.
    1. Mound the salad onto serving plates and garnish with the quail egg halves, cherry tomatoes, and potato wedges.
