Cheese Cups with Pasta and Bolognese Sauce

    Preheat the oven to 400°F (200°C). Grate the cheese on the small holes of a box grater. Line a baking sheet with parchment. Spread the cheese into circles on the parchment—you should get 6 of them. Bake for 4–5 minutes (depending on how thick the circles are). Don't bake them until firm; you just want the cheese to melt.

    As soon as the cheese melts, take it out of the oven. Carefully lift each round with a spatula and drape it over the bottom of an upside-down glass. Hold it in place with your hands—you can use string or rubber bands, since the cheese tends to "open up." Wait until the cups cool and firm up, then slip them off the glasses.

    Gently fill each cup with spaghetti cooked until done, then spoon tomato sauce over the top. Halve the cherry tomatoes and the mozzarella balls. Set a piece of mozzarella on each tomato half, garnish with basil leaves, and drizzle with olive oil. That's it—Italy, right in your home!
