Wash the greens, peel the garlic, put them in a mixer and season with salt. Then add the nuts (if there are pine nuts, they will not hurt either). Next, beat all these components to a state of uniformity. Now the main ingredient is to add the cheeses (it's better if the hard cheese is sheep's) and start pouring in the oil, stirring a little. It's better not to use a mixer here, because it will heat the oil and it will pretty much spoil the taste. In a good sauce, even semitones matter.
We put the sauce in the dish and put the refrigerator. Let it lie for 1-2 weeks in a closed container, infuse.
