Pour the sugar into a suitable saucepan with a thick bottom. Add filtered instant liquid coffee (you can also use plain water if you don't want the coffee taste of your sweets). Mix everything, put it on the stove over medium heat. When the mass boils, add more heat and cook until the sugar is completely dissolved and the color of the sugar syrup changes. It should become bright, golden. Remove the pan from the stove and start kneading the butter into the caramel. Then pour in the cream, stirring the mass at the same time.
Should get a homogeneous and even-colored caramel a la toffee. Lubricate the appropriate molds with butter and pour the sweet mass into them. You can pour it on a baking sheet, and then, when the mixture hardens, cut it into cubes.
It turns out very tasty homemade sweets, similar to toffee. You can wrap each one in a transparent film, in this form they can be stored for a long time. If you get them too sticky, you can roll them in powdered sugar.
