White Bean Soup with Smoked Sausage

This protein-packed, hearty soup is sure to warm you up in winter! It comes together in about 30 minutes if you make the broth ahead of time (the evening before works well). The soup turns out rich, with a pronounced smoky flavor despite the small amount of smoked sausage. It's genuinely delicious — and the aroma is wonderful. Give it a try!

  • Make the broth (take the meat out; you can chop it finely and add it back at the end, or save it for other dishes). Add the finely chopped potato. You can purée half the beans in a blender and stir them in, leaving the rest whole. In olive oil, sauté the onion, then add the garlic and tomatoes (I used canned) and cook for five minutes. Add the vegetables to the white bean soup. Finely chop the sausage, fry it, and add it in. Season with salt and plenty of pepper, and cook for 10–15 minutes. At the end, add the bay leaf and fresh herbs. Enjoy!
