- Here's how to make this spinach soup. What's great about it is that it works just as well for a weeknight family dinner as for a dinner party. Start by rinsing the fish well and boiling it. Once it's done, lift it out of the broth and set it aside, covered with plastic wrap. Peel your vegetables (carrots, parsley root, celery, onion), wash them, and cut them into thin strips, then place them in a saucepan. Add the butter and the fish broth and simmer the mixture for about 15–20 minutes. Meanwhile, rinse the lettuce and spinach well and slice them into thin strips. Add the potatoes, cut into small pieces, to the boiling fish broth and cook over low heat for 10 minutes. Then add your greens and cook for about 5 more minutes. Season with salt to taste and a little sugar, add the fish cut into small pieces, bring to a boil, and quickly take it off the heat.
