White Sugar Icing for Baking (with Lemon Juice)
A simple recipe for white icing — delicious and quick! Every New Year I make cookies with sugar icing for my youngest guests, since kids love everything bright, pretty, and sweet. And while cookies can be shortbread, sponge, oatmeal, or anything else — and those recipes are easy to find — icing is another matter. It took me plenty of trial and error to land on a method that works for me, and now I'll share it with you.

Cooking method
- How to make the icing: Start by thoroughly mixing the powdered sugar with the lemon juice you measured out ahead of time. Set the mixture over low heat and cook until smooth, about 5–7 minutes. Once the icing is ready, you can stir in food coloring in whatever colors you like (or leave it plain). Because the icing sets very quickly, dip your cookies into it while it's still warm. Then carefully arrange the cookies on a platter and let them dry. Once they've set, they're ready to serve.
