- These delicious meat draniki come from Belarusian cooking, and what sets this recipe apart is the black radish in the mix. It's best to use a small radish, which has less juice — and squeeze out any excess juice as you cook. Wash all the vegetables thoroughly, then peel them. Cut two of the potatoes into thin strips, and slice the radish and onions the same way. Fry the onion in vegetable oil until golden, then remove it, leaving the oil behind. In its place, add the radish and fry until done, then set it aside with the onion. In the remaining oil, fry the julienned potatoes. Cut the boiled veal so the pieces pull apart into separate fibers, then add the meat to the onion, radish, and potatoes and mix together. Grate two raw potatoes on a coarse grater, squeeze out the juice, and add them to the meat-and-vegetable mixture. Crack in the raw eggs and add the finely grated cheese. Season with dry spices and as much salt as needed. Finally, stir in the chopped dill. Heat vegetable oil in a skillet, spoon in the mixture, flatten it into patties, and fry on both sides until crisp. Serve hot with any vegetable side dish, or on their own.
