  • I'm sharing this recipe for a simple meal even though you didn't ask — I'm just bursting to pass it along. Take your honey mushrooms and rinse them; if they're frozen, thaw them first, and if they're salted, soak them. Pour water into a pot, add the mushrooms, and cook for about 40 minutes. A quick note: if you don't have potatoes or buckwheat on hand, you can make the soup with flour instead — lightly toast the flour in a dry skillet, whisk it into cold water, and stir it into the soup. Sauté the onion and carrot and add them in. If you're using potatoes, cut them into cubes; if you're using buckwheat, pick it over and rinse it. Season the soup with salt and cook until the potatoes or buckwheat are done, then serve sprinkled with fresh herbs and a dollop of sour cream.
