  • One day I spotted blue cheese at the store and realized I was hopelessly behind the times. People eat this odd cheese, they enjoy it — and I'd never even tried it. So why should I miss out? No reason at all. I bought some, but I was too nervous to eat it; the color really threw me. Still, I wasn't about to let a purchase go to waste. Eating it plain felt scary, but I figured if I cooked something with it, it might just win me over. I found a recipe called "Dor Blue with Vegetables" and decided to give it a go. I didn't have everything it called for at the time, but necessity is the mother of invention — I swapped a few things, cut back on others, and the dish came out pretty good, color and all.
  • I boiled the cauliflower and beans together in salted water for only about 10 minutes. The recipe wanted broccoli, but since I didn't have any, I used bell pepper instead. I cut it into strips and lightly sautéed it in olive oil. The zucchini I had wasn't quite the right kind either — it was a spaghetti squash. Regular zucchini you'd grate and fry, but spaghetti squash is even easier: wash it and boil it, then cut it open to find the "spaghetti" strands inside, which you simply scoop out with a spoon. Toss the vegetables with the herbs (better torn by hand than cut), season with salt, and drizzle with the juice of half a lemon. Cut the cheese into small cubes. Spoon the vegetables into small bowls, sprinkle with cheese, and add a little olive oil. That's it — ready to enjoy.
