  • To make buckwheat porridge with milk, I first cook the buckwheat in water, using a ratio of one part buckwheat to two parts water. Before you start, prep the groats: look them over and, if needed, pick through them to remove any fine debris or unhulled grains. Don't be lazy about it — good buckwheat porridge has no place for foreign bits. Rinse the groats well, rubbing them between your palms and pouring off the water a few times. Pour the clean buckwheat into boiling water salted to your taste. Once it returns to a boil, lower the heat and let the buckwheat simmer, covered, for 15–20 minutes. Stir butter into the hot cooked porridge and pour in the milk — I add enough to cover the buckwheat by about a finger's width or two. Bring the milk and buckwheat to a boil, then lower the heat without turning it off right away. As the foam rises, just stir occasionally. Letting the buckwheat simmer together with the milk gives the finished dish a smooth, rich flavor, with none of the separation you get when the water-cooked buckwheat and the milk are kept apart. Ladle into bowls and sprinkle with sugar. Enjoy!
