  • Have you ever made jam in the middle of the winter holidays? I got to do it once. It happened because a good friend of mine decided to give me a whole SACK of tangerines for the New Year! There was no way to eat that much citrus, so I decided to put it to use and make tangerine jam from a rather interesting recipe. How do you make it? Let me tell you! First, wash the tangerines and blanch them for 15 minutes. Right after that, plunge them into cold water and let them soak overnight. The next day, take the fruit out, cut them in half, pour warm sugar syrup (heated water and sugar) over them, and leave them to sit for half a day. Then warm the mixture and simmer over low heat for about 15 minutes. Let it rest for 8 hours. After that, cook for 10 minutes and rest again for 8 hours. Repeat this cook-and-rest cycle 4 times in all. Ladle the fully finished jam, still hot, into sterilized jars, cover with lids, and seal. Do not turn the jars upside down! In a couple of days, the jam is ready to enjoy!
