  • This isn't so much a salad as a work of art — less a dish than a picture. Hardly anyone makes it at home, because it's a genuinely elaborate recipe; not so much difficult as time-consuming. Boil a chicken breast and cut it into thin strips. Cut the bell pepper and onion into thin strips the same way. Make French fries: you could buy them frozen, but frozen ones turn soft and fall apart when fried, so it's better to make your own. Cut the potatoes into thin sticks and fry them in small batches in hot oil. Let them cool while you make the sauce. The sauce here is a signature of its own: mix equal parts mayonnaise and soy sauce, finely chop the tarragon leaves, and stir them in. Add the paprika and citric acid and mix everything really well. Toss the chicken and vegetables with the sauce. Lay a few lettuce leaves on a plate and arrange all the strips on top in the shape of a bird's nest. A restaurant chef can do this beautifully, so the fries look woven together — but if your hands aren't quite that nimble, a rough imitation is fine; the taste won't change one bit. In the center, place a few boiled, peeled quail eggs. Boil the mushrooms whole and use them to garnish the salad, along with the pitted black and green olives.
